Zero-Waste Blackberry Overnight French Toast Breakfast Casserole

Ingredients:

  • 5-6 pieces of bread or bread heels cut into bite-sized cubes. Leave some for the top. 

  • 1/2-2/3 of a block of cream cheese 

  • 3 eggs

  • 1 cup of milk (you could also use yogurt and water mixing until you find a milk like consistency)

  • 1 tsp cinnamon

  • 1/8 tsp all spice

  • Blackberry Jam

  • A handful of blackberries 

  • 4 tablespoons maple syrup



Directions:

Cube your bread and layer in the bottom of a pan. Save a handful or two for the top layer. Slice your blackberries and evenly distribute them. Cube your cream cheese and do the same. Drizzle your jam over the bread. Measure 1 cup of milk and three eggs mixing together in a separate bowl and then pouring over your bread. Add more bread on top. Cover the top with cinnamon and allspice. Drizzle your maple syrup on top. 

Bake for 30-35 minutes at 350 degrees or until the top looks golden brown and the egg mixture looks cooked inside when you spoon into it. The cream cheese will be melted and it will be soo hey but the egg should not be runny or liquify in places. 

Serve with another drizzle of maple syrup and a hot cup of joe ;)
