30 Minute White Chicken Chili for Meal Prep
White Chicken Chili
The perfect soup to ring in the Fall and Winter months
Directions
Add olive oil to a pot. Cut Chicken breast into strips and add it to the pan. Add spices and sear until cooked. Remove the chicken and let cool down. Add onions to the pot. Cook until translucent then add in your beans, broth and chilies. Shred your chicken in a mixer on medium high for two minutes. Or shred by fork. Add your chicken back into to the soup. Let simmer for a good 10 minutes. Once the flavors have combined well add in your dairy. Stir well and serve hot with tortilla chips.
Ingredients:
2 chicken breasts
2 small onions
3 Cans great northern beans
2 cans white corn
4oz-8oz canned green chilis
3 1/2 cups water
2 beef bouillon cubes
4 dollops sour cream
1-1/2 cup sharp cheddar cheese
1 tbsp cumin
1/4 tsp paprika
1/2 tsp chili powder
