Lentil Soup

This Recipe is perfect for an affordable, healthy vegetarian dinner.

Hot Lentil Soup for a cozy vegetarian dinner

Ingredients:

1 carrot

1 onion

2 celery sticks

8 ounces lentils (1/2 standard 16 ounce bag)

3 vegetable Maggi bouillon cubes (small) or 1.5 large bouillon cubes (Knorr)

1 tsp Italian seasoning

1 tbsp olive oil

3 cups water

Directions:

  • Dice your onion, celery and carrot. Add to a medium heat preheated pot with 1 tbsp oil.

  • Stir your veggies for 3 minutes, add your bouillon cubes, Italian seasoning, and lentils. Stir for another 3 minutes.

  • Add 3 cups of water to the pot. Bring to a boil and then reduce to a simmer (heat level 3-4)

  • Cover with lid and let simmer for 25 minutes or until lentils are cooked though.

  • Enjoy!
